>Seriously, I love pinterest! I find about a dozen things I want to do every time I go on there. I have about 100 projects that I want to do right now. But this is currently one of the top 5 things.

>This is something that I have been craving for a while now so I am adding them to our menu this week. Potatoes are a huge weakness of mine. I could eat them nonstop.  Just thought I would share the recipe!!

Ingredients:

  • 6 small to medium sized russet potatoes, rinsed clean
  • 8 oz of sharp cheddar cheese, shredded
  • 8 slices of smoked, thick cut bacon, cooked and crumbled
  • 1/2 stick of unsalted butter
  • 6 tbsp sour cream, optional
  • 2 tbsp of chopped chives, optional
  • Salt to taste
  • Pepper to taste

Begin by preheating your oven to 400 degrees. Poke the top of each potato with a fork and place on a baking sheet. Cook in the oven for 1 hour. Once cooked, remove from the baking sheet, and place on a plate to let cool for about 15 minutes.
In the meantime, if you are a fan of sour cream, add the sour cream to a small bowl, toss in half of the chives, mix, and let this sit in the refrigerator until ready to serve.
Cook your bacon, low and slow on the stove, for about 15-20 minutes. Remove the bacon and let any additional fat drain on some paper towel, before you crumble it down.
Once your potatoes are cooled, use a sharp bread knife and you will cut lengthwise, into three segments of one potato, long slices. So each potato will yield two skins, right? Discard the middle slice and reuse for breakfast the following morning, or heck for that matter, add some butter, salt, and cream, and make some rustic mashed potatoes.
Continue this cutting process with the rest of the potatoes. You should then have 12 skins. With a small spoon, being careful, scoop out about 70 percent of the potato, as you still want some potato in your boat.
Next, melt your butter in the microwave. Get your broiler heated to high. Brush the butter on the inside and outside of each potato skin and place them back onto the baking sheet. Season the inside of each skin with salt and pepper.
Place them under the broiler for 8-10 minutes until the insides get a bit crispy from the melted butter. Remove, and place generous amounts of cheddar cheese into each skin, topping with bacon pieces. Place these back under the broiler for about 3-4 minutes until the cheese is nice and bubbly. Carefully remove from the oven, and get ready.

>First off, sorry for no entries the last few days. I didn’t do Monday Monventure because I was stuck at home. My sister, who live about 2hours away accidentally took them home with her. lol And then yesterday I just had so much to do.

Anyway. So, my daughter is a thumb sucker. The first time she discovered her thumb I thought “Oh how cute, but I’m glad it’s not a regular thing”. I even posted a picture of it on Facebook. Here is the picture:

Cute right? Well now my daughter is 2 and I have the dilema of trying to figure out how in the world to stop her from sucking her thumb!! My son took a paci. Getting him to stop was so easy. I threw it in the garbage and told him my sisters’ dog ate it and that was it. I even tried to reintroduce a paci to my daughter early on, but she refused. Now I’m just worried that I am going to have a daughter who still sucks her thumb when she is 5. (or older!) For me, a last resort would be putting anything on her thumb. I just don’t like that idea. :( She does it alot when she is tired, but she will also do it if she is sitting and watching something. This is going to be such a hard habit to break. UGH.?

>Yesterday was one of my nephews birthday party. We had a blast!! Let me tell you what I learned…
Me+Water Slides= DISASTER! lol Ok, I went down several times and had a blast. But the last time I did..WAS.NOT.GOOD. Let me just say I know have scraped up elbows and a scraped knee. And the way I fell into the water, touching the bottom of the shallow pool, I thought I was being ripped into pieces. BUT it was so much fun before all of that! And I have to say, my sister came out alot worse than I did. She has the same scrapes but she also came out with a know at her eye. I’m wondering if it has turned blue this morning. I’ll be heading over there soon to sand and paint a stand she found for me to use for my tv. Here are a few pictures of my son and of the water slides:

This really was a fun place and I only found out it was even in Hunstville in the last couple of months. There is also a area for toddlers and a poll that is about 3ft deep. And indoors there is a rock climbing wall, bumper cars, numerous games, and etc. Oh, and mini golf. So it is a really great place to take the kids! It’s called  Southern Adventures. SO MUCH FUN!?
